Bebek Betutu Warung Nia Seminyak
Duck is a very interesting food ingredient to be made into delicious dishes and attract attention. One of them is Betutu Bebek, Betutu Bebek is the pride of the Balinese people. The word betutu comes from the word “tunu” which means grilled and is combined with the word “be” which means meat. Based on this description, betutu means grilled meat. Bebek betutu is a type of side dish made from duck meat that has been cleaned and then smeared with Balinese spices known as “base genep” all over the body surface of the duck meat and part of it is put into the abdominal cavity.
The seasoned chicken meat is then boiled or grilled directly to produce a distinctive aroma. The distinctive aroma that appears is caused by heating which causes water and short-chain meat fat to evaporate. The more steam produced, the stronger and tastier the aroma will be. The ingredients needed to make betutu duck consist of one duck that has been cleaned inside, base genep, wewangenan seasoning, salt and coconut oil. base genep is a typical Balinese seasoning consisting of shallots, kencur, candlenut, garlic, turmeric, galangal, ginger, galangal, cayenne pepper, lemongrass, brown sugar, shrimp paste, lime leaves, bay leaves, and coconut oil. While the wewangenan seasoning consists of black pepper, white pepper, cloves, nutmeg, coriander, candlenut, incense, jangu, bangle, and kaffir lime peel.
The process of making betutu duck begins with grinding the base genep and wewangenan then sautéing it until it smells good. The duck is boiled in water until it is three-quarters cooked and then removed. After removal, the base genep is put into the duck’s stomach and some of the base genep mixed with coconut oil is rubbed all over the surface of the duck’s body. The duck that has been seasoned is then kneaded a little so that the duck becomes soft and wrapped in banana leaves or areca leaf petals to then put on the coals. The coals should not be too big and the cooking process on the coals is approximately 6-7 hours until cooked. The betutu chicken is then served by slicing open the abdomen to the area where the gizzard is, then both breasts are pulled to the side. Betutu is a very Balinese way of cooking chicken and duck.
